I started as a casual facilitator in October last year, went full time a few months later and moved into the Course Director role quite recently.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;What does being the Course Director involve?&lt;/strong&gt;&lt;br /&gt;I deal with all the students’ queries about the courses and about their bookings, and advise people of the best course for them to start with.  I organise the class calendar and the teachers’ and facilitators’ roster.  I listen to people’s feedback and help to create new courses.  I still facilitate sometimes too!  It’s nice to get into the classroom every once in a while and be amongst the students.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;What’s the best thing about your job?&lt;/strong&gt;&lt;br /&gt;Seeing the students enjoying their courses so much and being delighted with what they’ve achieved at the end of the class.  It’s incredibly rewarding seeing how far people have come and how pleased they are with what they’ve done!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;How did you come to Planet Cake?&lt;/strong&gt;&lt;br /&gt;I started as a student myself a few years ago; I was working in Investment Banking but wanted a complete career change.  I was doing a Cert III at TAFE in baking and pastry and really enjoyed the cake decorating part of that, so wanted to take that further.  I looked on the internet and found Planet Cake’s classes.  I very quickly got hooked! and ended up doing the whole of the Basics Series and a few more besides.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;And finally...?&lt;/strong&gt;&lt;br /&gt;It’s never too late to change careers! Teaching was an occasional part of the job when I started, however as the courses have grown I am teaching a lot more these days!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;What does being the Senior Decorator and Teacher involve?&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Lots of work!  Being the Senior Decorator involves having a lot of responsibility as sometimes last minute things get thrown at me!  It also involves having the opportunity to do some beautiful high-end cakes which is a very positive aspect of the job, but of course there is a lot of pressure to make sure the end result is perfect!&lt;br /&gt;&lt;br /&gt;As the Senior Teacher, there is a lot of preparation for classes involved, as well as developing new classes and doing the step by step process for classes and course notes.  It also involves some experimenting with various cakes in my own time in order to decide how the students will get the best learning outcomes from various techniques.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;What’s the best thing about your job?&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;It’s an opportunity to be creative.  I love designing new cakes when I get the time.  I love to teach and to encourage others to love cake decorating and to get them hooked on it!!  I want every student to go home happy with what they’ve made.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;How did you come to Planet Cake?&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Paris and I had previously worked together at another cake decorating studio, and she asked me to join the Planet Cake team.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;And finally…?&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;I am born into the food industry! We’re starting off with Emma, our lovely Kitchen Operations Manager.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;How long have you been with Planet Cake?&lt;/strong&gt;&lt;br /&gt;I started off in February last year, in an admin role before moving into the Kitchen Operations Manager role in August last year.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;What does being the Kitchen Operations Manager involve?&lt;/strong&gt;&lt;br /&gt;Hard work!  Organisation, managing the staff and the day to day running of the production kitchen, including deliveries, orders, client liaison, whatever the day throws at me!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;What’s the best thing about your job?&lt;/strong&gt;&lt;br /&gt;Seeing amazing things happening in the kitchen – watching cakes become fantastic creations before my eyes!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;How did you come to Planet Cake?&lt;/strong&gt;&lt;br /&gt;I was a chef for five years, then I worked in Sales and Events for a few years.  I then did a retail baking course at TAFE where I did 18 weeks of cake decorating, and I enjoyed it so much I decided to pursue it further.  I saw a part time admin role advertised at PC, and wanted so much to be part of the Planet Cake world that I applied straight away.  Paris saw my resume and offered me the full time job of Ops &amp; Events Manager.  How could I say no?    My love for cakes grew and grew!  I eagerly wanted to be part of the kitchen and Paris saw how keen I was, and as the business was growing a Kitchen Ops Manager was needed.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;And finally…?&lt;/strong&gt;&lt;br /&gt;I love what I do! Adam and I have been discussing the cake for 2-3 weeks now and I have set him a challenge of turning this incredibly challenging cake into something beautiful! What would you do if your client came to your with the cake they had fallen in love with and it looked something like this? It was a difficult cake because we did not want to reproduce it, the gold in particularly was too strong for the venue.  Therefore we decided to make the base colour latte and dust it in gold.  Adam’s beautiful handmade sugar roses were made in ivory and latte and some we dusted with gold dust and steamed and others just dusted, I think the result is like a warm coffee dusted with chocolate rather than a gold cupid.  Adam did a wonderful job, sometimes is about taking something really challenging and improving it while still keeping the client happy! On a practical level I am washing 3 loads of ganache stained clothes and have walked my dog for the first time in a week (lucky shes a chihuahua).  Watching myself on video made me cringe especially as I was eating a magnum icecream at the same time as looking at my own bottom. However seeing the cake again was spectacular I still cannot really believe we did it. In saying this the one negative is that I do miss the volunteers, it feels like the weeks after christmas when all the excitment, relatives and good times suddenly disappear and you are just stuck with boring old mum and dad! So although I would prefer to crawl under a rock I have been trying to keep my energy up and keep from flagging.  The best way to do this is to get my head stuck into another cake! I have given Adam a 7 tiers monstrosity of a cake, colors gold/latte and white, the clients are having 800 guests at their wedding and it is one of those cakes where the saying ‘making a silk purse out of a sows ear” is extremely apt.  Adam and I have been discussing the cake for 2-3 weeks now and I have set him a challenge of turning this incredibly challenging cake into something beautiful! This was make or break time, the goal was to have all of the sculpting completed by the end of the day so that the cake could set over night and we could cover it with icing tomorrow! However as much as JM tried something was wrong! An hour ticked by.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://3.bp.blogspot.com/_tBQPZKOObGw/TTq6GqmAYKI/AAAAAAAAAdY/AlWQ39emvOE/s1600/22.01.2011%2BSOHC%2B046.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="http://3.bp.blogspot.com/_tBQPZKOObGw/TTq6GqmAYKI/AAAAAAAAAdY/AlWQ39emvOE/s400/22.01.2011%2BSOHC%2B046.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5564964913245348002" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Conclusion: the internal boards of the cake were too big, giving us 'dummy' lines to follow. This meant that instead of relying on measurements and computer programs we would have to revert to the old fashioned method of carving by sight.  Unfortunately we had lost valuable time and work was stalled until the problem could be resolved. In addition carving the Opera House by sight nearly fried everyone’s brains…..just look at the thing!&lt;br /&gt;&lt;br /&gt;&lt;a href="http://1.bp.blogspot.com/_tBQPZKOObGw/TTq54THnhfI/AAAAAAAAAdQ/2Fg-WzGZ8xU/s1600/SydneyOperaL_468x321.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 274px;" src="http://1.bp.blogspot.com/_tBQPZKOObGw/TTq54THnhfI/AAAAAAAAAdQ/2Fg-WzGZ8xU/s400/SydneyOperaL_468x321.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5564964666425705970" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Carving by sight is made even more difficult when you recognize that the Opera House does not have a flat base, the sails are going up by increments at the front.  We then all agreed that we could only do it by using the sail styro foam tips as a guide and matching the base cake to the tips. This was a problem was they had not been carved yet!! The pace has slowed somewhat.  I have given them a challenge to catch up top speed, tomorrow they will be on morning shift and the first to start constructing the cake.  If they can get to the third layer of cake on the biggest sails before the end of their shift, then I will wear an “ILOVE THE TENORS” T-shirt and heart tattoos for the rest of the day…I did notice they leapt into action quite promptly.&lt;br /&gt;&lt;br /&gt;DAY #2 PLAN:&lt;br /&gt;&lt;br /&gt;Today was the day we collected the Styrofoam for the base and carved it, this was Margie’s domain so of course this was done! I had a sleepless night last night worrying about everything else!  We needed drawings for the in-between boards, the boards cut and covered with vinyl and the centre poles in place before we could start building (layering) the cake. I thought that this was a spanking plan of action….&lt;br /&gt;&lt;br /&gt;CHALLENGE #1 - JOBS&lt;br /&gt;&lt;br /&gt;The first challenge was finding jobs for the volunteers while we waited for the big stuff to work on. First team up, the Soprano’s finished making all of the ganache and filling all the cakes by 11am, they were so fast I immediately started thinking about potential employment opportunities at PC, I was speechless, I thought it would take them all day! The Styrofoam that arrived instead of being 13 cubes was 13 icebergs! I am scared, and like I mean it I really am scared, not about weight gain but about the big bad SOHC!  Since my last post I have made a plan, changed my plan, developed a strategy, ordered 16 times too much Styrofoam and eaten a lot of food. I want the volunteers to make it not watch PC staff making it. The biggest question I have left for last, how were we going to attempt the sails? I really only wanted to speak to one man, cake genius Jean-Michel Raynaud.  Jean Michel has worked for me and is brilliant in his own right, he is to big cakes what pro surfers are to big wave surfing, he truly is a master.  He also happens to be incredibly cool; I managed to catch up with him late last week and as we sat back having a coffee in the sunshine on Sydney harbor, looking at the SOH. In the company of Jean-Michel, it all seemed possible. I relaxed, for 10 minutes………….&lt;br /&gt;&lt;br /&gt;&lt;a href="http://2.bp.blogspot.com/_tBQPZKOObGw/TTQ9sNcnXsI/AAAAAAAAAT4/qBn_1IY6ENk/s1600/untitled.bmp"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 305px; height: 400px;" src="http://2.bp.blogspot.com/_tBQPZKOObGw/TTQ9sNcnXsI/AAAAAAAAAT4/qBn_1IY6ENk/s400/untitled.bmp" border="0" alt=""id="BLOGGER_PHOTO_ID_5563139269442625218" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Jean-Michel and I both agreed on a construction plan and he was able to make lots of suggestions and finger wagging warnings about all of the potential perils, using chain saws to cut Styrofoam was dangerous and not highly recommended. However we will need to use some Styrofoam to alleviate the weight, I don’t want to use too much.  We agreed on using Styrofoam for the tips of the sails and the rest to be sculpted if possible, if there is still a weight issue we could put some styro right at the base.  Then JM dropped his bombshell, he would not be able to assist directly in the project, at this point I think I left my body and started to free fall into panic. This means I am the only person consistently managing the project, the world suddenly seemed a very lonely place. The volunteers will be greeted with an orientation meeting and then we are all boarding the bus for a SOH tour and lunch. The challenge I have set making the worlds largest Opera House Cake which will kick off on the 18th of January (NXT WEEK!!!) when 22 volunteers from all around Australia come to help us make the largest replica of the Sydney Opera House in cake ever made.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://3.bp.blogspot.com/_tBQPZKOObGw/TSmThyjkZKI/AAAAAAAAASw/EacSWv5OcJU/s1600/800px-Sydney_Opera_House_Sails.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 264px;" src="http://3.bp.blogspot.com/_tBQPZKOObGw/TSmThyjkZKI/AAAAAAAAASw/EacSWv5OcJU/s400/800px-Sydney_Opera_House_Sails.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5560137423681512610" /&gt;&lt;/a&gt;&lt;br /&gt;The OH cake, due to be revealed at the Sydney Opera House on Australia Day (26th January) will take the entire 7 days of production working in 2 shifts and molding at least 120kg of cake (I am still calculating)! The OH cake crew will kick off with a debrief and Opera House site visit on the 18th before we begin 7 days of intense and incredibly complex cake decorating occupying all the PC kitchens, to give you an idea of how serious this is for the first time in 5 years PC cake production has been closed down.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://4.bp.blogspot.com/_tBQPZKOObGw/TSmTUutyG5I/AAAAAAAAASo/4odU-Iac5qc/s1600/image043.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 363px; height: 272px;" src="http://4.bp.blogspot.com/_tBQPZKOObGw/TSmTUutyG5I/AAAAAAAAASo/4odU-Iac5qc/s400/image043.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5560137199312313234" /&gt;&lt;/a&gt;&lt;br /&gt;The good news is that I have the most incredibly talented staff and our wonderful volunteers who will be our own personal cake decorating army. I will need all their talent and patience more than ever. We are embarking on a project where no cake decorator has gone before (on this scale).  We will be working for the first time with 22 eager volunteers and have the whole event recorded by a TV crew for prosperity (I forgot to mention that bit I think I am blocking it out).  On that note I might try emailing for the 5th time the decorating guru himself Jean-Michel Raynaud who is trying to have a holiday in Thailand, but will be back to help us and advise on the project himself.  Jean Michel has worked for me before and I respect his vast experience in all things cake. Together with the owner of Sweet Art, Anthea Leonard, Jean Michel made a life size cake of Barbie for her 50th birthday this is the knowledge and experience I desperately need. Between you and me despite telling the PC crew that I have it under control, I actually have no idea how we are going to make the cake, but I bought the wooden model from the Opera House shop and I believe a lightening bolt will strike me tonight, or hopefully at least by the staff meeting at 10am tomorrow morning!  It is terrifying to think that if we fail PC will be the laughing stock of the cake decorating community! I have developed my own formula for designing cakes. I am sure it’s not original but it usually works in creating a design that is perfect for the client, I hope this helps our students.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;1. Venue&lt;br /&gt;2. Emotion&lt;br /&gt;3. Shape&lt;br /&gt;4. # of People&lt;br /&gt;5. Color&lt;br /&gt;6. Decoration&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Let’s use my Cousin Claire’s wedding cake as an example!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Venue:&lt;/strong&gt; Small modern venue at botanical gardens – Needs a medium sized cake with modern shape.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Emotion:&lt;/strong&gt; Claire wanted a cake that would be fun and have everyone relaxed.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Shape:&lt;/strong&gt; After guidance on what the venue would require my cousin chose the Madhatter shape (I also suggested a square would have looked good)&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Number of People:&lt;/strong&gt; This can determine the size of the cake but I prefer to for match the venue. We suggested stars to balance so many figurines on the cake. This information is not confirmed as everyone involved in the show is so stitched up with confidentiality contracts that no one is able to reveal any information publicly. The good news is that we can all sit back and relax and enjoy the incredible spectacle that Australia’s top chefs and talent have given her and we can claim an opportunity another day. P.S. Jess is only new to teaching this class but the results so far have been outstanding. This includes covering a 3 tier base, making roses and peonies, using a centre pole and most importantly managing time! This week I wanted to talk about self confidence. This is an issue at all levels, and it is lack of confidence that I find is behind most of the problems brought to me such as pricing, business success, dealing with request from friends and family etc.&lt;br /&gt;&lt;br /&gt;Newbie’s to cake decorating almost always feel self conscious as it can be daunting to be in classes decorating in front of others and having their work ‘judged’.&lt;br /&gt;&lt;br /&gt;Professional cake decorators starting their own business often loose confidence as they go from being a serious hobbyist to charging money for their cakes.  &lt;br /&gt;&lt;br /&gt;Senior professional decorators often feel insecure that their work may be compared to other very talented decorators or that they may fail when working in a genre that is not their strength, for example novelty&lt;br /&gt;&lt;br /&gt;There is not a decorator alive who has not has periods of insecurity about their abilities, their cakes prices or their areas of technical weakness. But from my experience there are a number of ways to build confidence and keep it.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;1. Invest in proper training&lt;/strong&gt;: Planet Cake, Online Video, Via Books etc. Continuous training will empower you with knowledge, skills, techniques and feedback.  Every single great cake decorator I know continually reinvests in their training.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;2. Join a community&lt;/strong&gt;: Online, Tea Party at Planet Cake, Flickr, Facebook, Set up a group or join a group in your area.  I know that through the T-Party a group has been organized and is flourishing in Brisbane.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;3. Do not compare yourself, EVER&lt;/strong&gt; to other cake decorators; it’s a waste of time.  The only opinions that should matter to you are yours (most important) your teacher and your customers.  If those 3 are satisfied there is no need to compare yourself to the Angelina Jolie’s of the cake decorating world, it just makes you feel awful!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;4. Focus on what you are good at&lt;/strong&gt;, if you are hopeless at making figurines just tell people you don’t make them and refer them to a cake decorator that does.  If you love piping then make sure all of your designs are piped.  Always direct your cake designs where you are strongest. There is not a single cake decorator at Planet Cake that does every cake brilliantly, in fact some are down right awful with some cakes and they would be the first to admit it.&lt;br /&gt;&lt;br /&gt;By the law of probabilities someone is not going to like your cake and a customer will complain. You might be aware that I actually credited fellow cake decorator &lt;em&gt;Hello Naomi&lt;/em&gt; for inspiring one of the designs in the book.  I also asked her permission which she was happy to give.  &lt;em&gt;I think at the end of the day its about manners!&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;&lt;em&gt;&lt;strong&gt;What if a decorator uses my cake design or photos and claims it as their own?&lt;/strong&gt;&lt;/em&gt; &lt;strong&gt;&lt;br /&gt;&lt;br /&gt;Example:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Rihanna’s cake below was designed by Antony Bullimore at Planet Cake, the team at Planet Cake made it and Rihanna cut it. No, because legally the cake design is not registered as a design.  We don’t own the rights to the zebra print, the exploding stars is a common cake design, and as for the bling this will change with every cake anyway.  &lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;em&gt;So what do we do with our feelings? &lt;/em&gt;&lt;/strong&gt;&lt;br /&gt;Despite all the facts and people saying "its a compliment" you do feel morally and ethically outraged!! Come up with your own ideas!! Despite how childish this is I think most designers feel upset, designs are very personal.&lt;br /&gt;&lt;br /&gt;How do I respond? &lt;em&gt;&lt;strong&gt;I Let it go&lt;/strong&gt;…….&lt;/em&gt;  If you try and defend yourself you will sound like a raving lunatic (I have been there). The only satisfying act that I do enjoy is if the opportunity arises (for example if a client brings a copy of your cake) show or email the original cake against the copy. The difference is almost always obvious, and at the end of the day everyone respects an innovator not an imitator. &lt;br /&gt;&lt;br /&gt;I would never recommend making the issue public. Please remember to take the higher ground, maaking posts on your blogs and facebook about design theft guess what? &lt;em&gt;Makes you look like a raving lunatic&lt;/em&gt;. its not fair, but at the end of the day our reputation and character is more important than a cake design, think of how &lt;em&gt;April Reed&lt;/em&gt; must feel? I think half the cake decorators in the world have magpied her designs.&lt;br /&gt;&lt;br /&gt;The only exception to this rule for me is when a competitor starts to imitate or replicate business identity (logo website etc) or intellectual property such as pricing etc.  I had a very good friend come to me in the industry and this is currently happening to her after spending 5 years building a strong brand in the market. We have received lots of positive feedback about the book Planet Cake Cupcakes and I really liked spending time with the team (Margie, Adam, Adina, Danielle and Jess) on the road for the &lt;strong&gt;book tour&lt;/strong&gt;. Here is photo of us arriving at Brisbane airport at 6am and a coffee was definately in order after a 4am start, same for Melbourne. I gave Dermalogica hydration mask a work out, not sure it worked. While looking through the photo library this morning, I found this photo of the staff…I knew I should be spending more time in the office, &lt;strong&gt;jokers extraordinaire&lt;/strong&gt; these guys, must be the sugar!  I also have a confession to make, at the Brisbane book launch &lt;strong&gt;I stole a baby&lt;/strong&gt;, his darling mother was eager to get him back but its too long since I have held a baby and those chubby legs pull me in every time, I apologize! It was a delight to be able to meet and get to know so many faces.  The program involved some words from me about the book, cake decorating and the future trend of cupcakes. Then cupcake decorating with the incredible and elusive Margie, Adam,Adina, Jessica and Danielle using three designs from the book, teaching the techniques of modeling, faces and painting. There has been a fall in cupcake requests for Weddings and Corporate, however an increase in other areas. Just a gaggle of 20 cakes decorators and me, so keep your eyes peeled for details, I know the Sydney one is full;0(&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;br /&gt;Next week: &lt;/strong&gt;will be hectic, photo shoots, working our way through the upcoming Kids Express, Cupcakes Olympics event.  200 corporate contestants killing each other Masterchef style in Sydney with each team making 200 cupcakes in 2 hours, not that easy if you have never decorated before.  We also have Foundation course running next week. With well over 20 cakes in production this week there have been some slightly hectic moments but it has been so fantastic and inspirational to see the place pumping with my super-talented and creative team. Go PC!&lt;br /&gt;&lt;br /&gt;While there were so many to chose from, I have to say my favourite cake of the week was this ENORMOUS $1 coin cake we made for the Royal Australian Mint.
